After selecting a tower you can see the option to upgrade or sell.
Most maps have a start point, and an end point. After the final wave, you can easily sell off your towers once the enemies have passed them.
Or just build towers and sell them all straight away. But there’s a slightly penalty in how much you get back from selling.
