Very very simple.
Set up a 1 vs. 1 match with two controllers and kick your second guy out of the ring and wait.
Make sure you enabled countout in the game settings before the match :)

You can easily get this when going for either A real Técnico or The most Rudo of all . You can also get this by setting up a 1 vs 1 match with countout set to 10 seconds. Get your CPU opponent to the outside with you and attack him with either weak/strong grapples till about 8-9 second left in the count. Race back into the ring to beat the count. Trophy will unlock after the match.
If you use two controllers, have controller 2 simply stand outside and get counted out, while you stand in the ring.
