Easy. Select 50CC, "Plane Wreck" and SHREK or GLORIA. Now try to collect every hourglass on the track. 1st round is the normal track; on the 2nd lap, you will have to use both shortcuts. The 3rd is normal again and so on.
Will take you 1, 2 or 3 tries, but shouldn't be a problem. You will get the 10 and 25 hourglasses achievements, when you try to go for 40.

Personally I found the Shrek Swamp track the easiest to collect hourglasses on. The only difficulty I had was with the log swing sometimes getting me but I had plenty of time to get 40 hourglasses and just gave up when I got to 50 seeing as there was no more point to it

All you have to do is collect 40 hourglasses in one checkpoint race. It can be any stage and these trophies stack. The NYC Zoo track seems to be the easiest track. If you collect all 40 hourglasses without fail, then 3 trophies are yours just like that. If you failed, don't worry. Try again until you get 40 hourglasses.
