2 controllers signed in choose 100cc and Melman on both and choose shrek swamp. Start with one controller and get 10 checkpoints then switch to 2nd controller and get 10 with that one aswell, achievement unlocked.
Of course this will be easier with 2 players with both playing and you can go for the 25 and 40 checkpoint achievements aswell.
