An easy way to get this achievement is to edit the Vikings roster and change Peterson to QB, then set offsides penalties off. The achievement will unlock after the game.

A tip to make the game a little easier as well:

Once you score a few times, turn the play clock off. When you get possession of the ball, just use the QB Kneel play to keep time going. Without the play clock, the game clock will tick down until the two minute warning (unless the other team uses their timeouts). Generally, you could make an entire quarter disappear with 2 plays.

Just a few additions to the above: Adrian Peterson is on the Vikings team. I used 2 controllers. The easiest way to pull this off with 2 controllers is by selecting a halfback run play. Specifically select a pitch play and then select the HB Strong toss play or the first play on the left. Position the defender to the right of the halfback where he is almost off the screen. hike the ball with the other controller and then just use your controller to let your defender tackle peterson. This works pretty well as the defender lines up for a perfect tackle but you have to move the defender a little to the right first when the ball is hiked or otherwise he will tackle the QB before he can pass the ball to the half back.

note: once you tackle him for a loss 3 times, play out the rest of the game. Do not SIM ahead because you wont get the achievement. Turning the play clock off in your settings will allow you to run out the clock a lot faster. But you have to do this before you start a game.
