How to unlock the End of the Rainbow achievement in Mafia II: Definitive Edition - Definitive Guide
This can be earned in chapter 11 towards the end. You will end up in an Irish bar shoot out. Kill everyone and grab the Grease Gun! Make sure you reload it. Head out side and one guy will jump in a car and try to drive away. Quickly shoot the driver or if you are lucky the gas tank (which I did) if you miss just reload the check point and try again.
This is missable, but you can easily avoid that if you follow my tip to retry mission until you get it. You can get it in Chapter 11.
At a point in the story, you will head to a bar with Joe to take out the Irish. If you can, take a fast car. Joe will try to go to his car, but if you get in your own, he will join you.
When you go into the bar, you will have to kill all the people in there. I would recommend going out the back door, when I went out the front, my car had disappeared (could be a general bug, rather than the door though). Go outside, and a car will drive off. Quickly jump in your car and drive after them. I found if I pushed them when they went to turn, they would overshoot it and crash. I then jumped out and shot the driver to unlock this trophy.

If you lose the car and Joe suggests going back to his place, you should pause and select Retry Mission. This will restart you in the bar so you can try again. If the car is missing when you go outside, Retry Mission. By the time you hot wire a car, you will have lost them.

Once you have killed all the enemies inside the bar, you will need to exit and kill the enemy that flees in the car. His car is in the back I'd the bar and that's where he'll take off from. You can either exit the back of the bar or the front where you initially came in. I would suggest leaving through the front as it will be quicker and easier way to get the kill however, going through the back is not difficult. The only difference is if you exit through the back the enemy will take off and you will need to jump in a car and chase him down until you can immobilize his car and kill him whereas if you exit through the front you will be ahead of him allowing you to shoot him right in front of the bar after he takes off. As long as you can shoot him before he drives past you, you won't need to chase him down. If you're walking out of the bar he will be coming from the right so just be ready to fire. Both ways are easy to do, that way is just a little faster though. The video I posted shows when I unlocked the achievement.
It is recommended to do this in chapter 11 "A dear friend".
Joe will propose you to take revenge on the Irish mafia by going after them in their pub. After shooting the men there, their boss will try to drive away. Lead the chase with your vehicle and catch up with them so that Joe can shoot the occupants or stamp on the car with your own to force them to stop. You can also, as soon as you leave the pub, shoot the wheels of the car to prevent it from rolling and shoot the mob boss directly. After you escape the Irishmen and get to Joe's place in Chapter 11, you will go with him to a bar. After killing all of the enemies in the bar, the objective marker will lead you out the back door of the bar. Before you go out, know that the leader of the gang is going to jump in his car and drive away, and you need to kill him to unlock this achievement. There are a couple ways to accomplish this. The hardest way is to go out the back door, jump in a car, chase after him and attempt to run him down that way. The easiest way is to first ensure you grab the "greaser gun" in the back hallway where the last enemy was. Now, instead of going out the back door, go out the front door. The cutscene will play, and the leader will be driving towards you instead of away from you. Unload on the car witht he greaser gun and you should have no problem killing the leader before he can drive away. You can either aim for the driver to kill him or just above the rear wheel to blow up the car.
