Introduction
No disrespect to the other solutions, but I'm going to be posting my own because the guides only show the location and don't explains some crucial things. The Xbox 360 guide is very good, so credit to HellCreeper666 for some helpful information years ago. This glitch is a very historic one, so I'm not sure who originally found it, but I don't claim any credit for the method itself. This is also the best method for unlocking the following, which should unlock during one of your glitch-sessions:

Glitch Method
Firstly, you need to go to the location in the below picture.
Then, you need to drive through the window at the below 'Luncheonette' store/resteraunt.
If you approach at the right speed, you'll drive through the window and fall through the map for eternity. You will also accumulate mileage whilst you do this, and never run out of gas (it will say you're running low but never actually run out). A good visual indicator of the right speed is to reverse back from the shop to the chain fence and drive forward from there (too fast/slow and you'll just crash into the wall).

Very Important Points:
- Firstly, you will want to connect your controller to your USB charger cable and also rubber band your right trigger (RT). Doing both is mandatory, as otherwise your game will pause every 10 minutes (I tried just the cable originally, but without pressing a button it would still auto-pause). I found using one of my fiancée's standard skinny hair bobbles worked extremely well; celotape was something I've used for other games too as an alternative.
- Secondly (and probably over-conservatively) I recommend you take control before the 1000 mile mark (I'd recommend 980-990 miles) . Do the glitch until 980-990 miles and do the last 10-20 miles 'normally'. Some commenters are saying this unlocked whilst hitting 1000 miles mid-glitch, but from my experience, this didn't work and I had to quickly reload and manually drive the last 10-20 miles.
- Thirdly, saving your progress is very important as the game has a tendency to crash and quit to dashboard (happened to me 4-5 times). Changing any option in the options menu (i.e. brightness under Video) will prompt a save when you back out to the pause menu and save your game statistics progress. Do this regularly! I recommend that you're actually around whilst doing this and saving every 1-3 hours or so. I personally left it on overnight twice to find no progress had been made either time as the game crashed to dashboard mid-sleep. If you save regularly you don't lose much progress if the game crashes. Just amending an option will save your progress, so this is extremely easy. Just leave this on as you get on with your day/play on another console/watch something/read something/work from home, etc. and check every once in a while to save and check.
Overall it took me around 20-25 hours of rubber banding.
Final note - Your statistics save, and can be checked via the pause menu in game statistics. This shows your driving stats exclusive to Jimmy's Vendetta, so don't worry. If you check your garage, vehicles will show 0 miles driven after a save/re-load, but they will accumulate to your game statistics and this is all that matters. The achievement popped for me while I was in the glitch for both the 360 and definitive editions. However, I did save at 990 miles for both versions just in case it didn’t pop I could still dashboard back to 990 miles.

This trophy will probably be the last in your acquisition, unless you use the exploit present in the DLC. To do this, go to the location indicated on the map below. From there, rush into the window in front of you to find yourself in free fall. You will need around 40 hours to accumulate the kilometers, at a rate of 20 kilometers in 4 hours.
Glitch note: For my part, even having reached the 1,609 kilometers, the trophy didn't pop. I returned to the last save point which thus returns to the map while maintaining your progress. I went to one of Jimmy's apartments to save my game. I quit the game and relaunched it. As soon as I opened a car door, the trophy popped.

Otherwise you can do it by upgrading your Ascot Bailey in a workshop. From there, follow the motorway turns. You can follow your progress in the menu by going: Options => Statistics => Distance traveled by car.
You will likely have only driven around 150 miles by the time you finish the story. So this is likely to be a big grind. There are two options for grinding out all of these miles. The first option is the fastest, but is completely manual, meaning you'll need to be actively playing the entire time, which will be a solid 20 hours of doing nothing but driving. Head to the freeway (yellow road on map) and keep driving from one head to the other. You can get a good speed so will cover miles quicker. If you start running out of gas, just steal another car and carry on.
The second method involves using a glitch in the map. This method is slower, but allows you to idle the game so you can do something else (go to work, sleep, etc.) which you progress towards this achievement. There is a clothing store in the southwest corner of the map that has a window you can drive through. The car will break the display window and you will free fall through the bottom of the map. You can average about 30 miles every hour. After you drive through the window and start falling, know that you do still need to band your controller to hold down the gas pedal in order to accumulate miles driven. Also be aware that there are reports of the achievement not unlocking if 1000 miles are reached while in the glitch spot. Instead, get close (990 miles or more) and then save, and quit. Reload the game, and drive the remaining mileage legitimately, and the achievement should unlock. Lastly, in order to save your progress while in the glitch, pause the game, go to Options, and then Game Options, and turn subtitles on or off. This will force a save when you leave the menu, saving your statistics.
