You can earn this achievement a early as Chapter 2.
In Chapter 2, Mike will task you to steal a car from a rough part of town. (Vito and Joe talk about how awful the place is)
After stealing the car you'll follow the waypoint back to Mike's. But on the way you'll come to a slopped road that leads into a tunnel. If you get enough speed down the road you can get some air off the part of the road that dips.

just find a big hill and hold down r2
then don't break and go flying off it works best from uphill to downhill slopes

To obtain this trophy, choose a fast car like the Ascot Bailey that Leo leaves you after having driven him to the station in chapter 11 “A dear friend” . Remove the speed limiter with 
and drive fully on the bridge located in the center of the map. When you reach the end, let go of the accelerator and watch your car fly like a bird. The following video shows you a possible route for this trophy (Credit to San Andreas Gaming): LINK

An easy way to do this is during Chapter 11 once you have helped Leo escape and are told to take him to the train station. Before doing so, drive this very nice and fast car to a body shop and upgrade its engine twice. Doing so will unlock Tuned Ride (10G) and Dream Handling (10G). Now head to the main big bridge (central west part of the map) and go to the west side of the bridge. Drive across the bridge heading east and don't ease up on the gas. You'll easily build up enough speed for Pedal to the Metal (10G) as you near the end of the bridge. The east end of the bridge has as drop off in the road, where you'll go flying off and be airborn long enough to unlock this achievement.
