very early in chapter 3, you will be asked first to haul crates, then when Vito flips shit about it and drops Joe's name, he is instead told to collect money to pay the barber. After beating up the tall guy in the plaid shirt, head back to Derrick and a cut-scene will start. the achievement pops after the cut-scene is finished.

Near the beginning of Chapter 3, Derek gives you a shot to prove yourself by collecting the "fee for the barber" from the dock workers in the warehouse. After collecting from three workers, a worker named Bill challenges you to a fight. Knock him out, bring the loot to Derek and you'll have the trophy.
