How to unlock the Certainly Was Exciting achievement in Mafia III: Definitive Edition - Definitive Guide
Although spoilers are minimized, there are minor spoilers implicit in the description of the achievement.
This is automatically unlocked during story progression although the sequence of events differs depending on player choices. Olivia is one of Sal Marcano's three capos—the other two are his brothers Tommy and Lou Marcano. Lincoln must deal with all three in the order of the player's choosing. In my game, the sequence was Tommy, Olivia, and Lou.
After dealing with Remy Duvall, Lincoln unlocks the mission, Kill Olivia Marcano. Lincoln goes after her and the triggering event for the achievement, leaving Olivia Marcano to her fate, occurs fairly early on. Nevertheless, the achievement does not unlock at this point. Lincoln must first deal with some related business involving Stephen Degarmo.
Once Lincoln has successfully accomplished all tasks related to Stephen Degarmo, a series of cut scenes follows beginning with Donovan testifying and concluding with Father James's thoughts. Once Father James's cut scene concludes, the setting transitions to a sit-down session. A banner appears on the game display stating that the mission is complete. The achievement then unlocks at the beginning of the sit-down cut scene.

This mission is a lot of fun but it can get a little tricky because not only do you not have your guns, but you don't have your throwable weapons or even your health kits. Definitely a good mission to have an armor vest for.
Lincoln will disguise himself as a waiter and sneak into the country club where Remy's Duvall's wake is being held. Make your way back to the kitchen, drug the wine with the LSD Donovan gave you, then head out to serve the guests. People needing wine will have an wine glass graphic next to them, press to pour them some LSD wine.
After Olivia's speech you'll be told to serve her bodyguards the drugged wine as well. Once finished, head back outside and have a smoke with the other waiters and kitchen staff. After your cigarette, return inside to see the effects of the LSD taking hold on the mourners. Follow Olivia upstairs and leave the wine on the bar.
Behind the bar you'll see a revolver that's your best bet to kill Olivia's men with. It only holds 6 shots and (in my playthrough) only came with 6 spare rounds. 12 rounds should be enough to dispatch Olivia and her guards but accuracy is very important as the guards usually take 2 rounds to kill.
Use the element of surprise to get a headshot on the first goon and quickly take down another if you can before taking cover behind the bar. In my playthrough one of the guards had an AK-47, you'll want to take them down quickly. Once you've taken out the guards, set your sights on Olivia. She's probably cowering/blind-firing from behind the couch, so you may need to flank her to land shots, or even rush her if you've run out of bullets.
After the cutscene you'll need to prepare for your escape. You should see a supply room of sorts which contains armor, a health kit, and an M-14 rifle. You may want to swap the revolver you grabbed for one of the guards pistols. Make sure to grab all the ammo you can carry.
At this point you've got a great opportunity to unlock Never Saw It Coming if you haven't already. In the supply room you'll see another door with an enemy on the other side calling for Olivia. He can't get through, so take your time gathering weapons. Once ready, kick the door down and take out the enemy within 2 seconds to unlock another achievement.
Head outside, down the stairs and into a courtyard full of enemies. This can be a tough fight, mostly because you don't have the supply of health and grenades you normally have, and you're probably without your preferred weapons. As always, make heavy use of cover and avoid advancing too much, too fast as you can get surrounded as more enemies advance. You'll face opposition from both the left and the right so don't leave yourself in an exposed position.
Make your way to the outbuilding and rescue Degarvo after killing the last of his captors. Head out the back door and into the driveway to find Degarvos car. Hop in and take off. You'll need to lose the police and escape the area so leaving Frisch Fields is likely a must. Like all police chases, getting off the main roads and into rural/industrial areas is a safe bet, especially since there's a ton of police after you.
I managed to lose the cops by hauling ass up the northwesternmost road on the map, which abruptly ends as the road has fallen into the lake because of a mudslide of some kind. I ended up crashing the car off the cliff, then watched as Lincoln and Degarvo teleported back up to where the road ends. Since I lost the police shortly before going over the cliff, I merely waited at the end of the road for the police circle to disappear before walking back to where the cops are and called for a car. I don't necessarily recommend attempting this strategy but it did work for me.
At any rate, once you've lost the cops (and got Degarvo into a vehicle if his was destroyed) you've got 4 minutes to get him to Donovan. Since I called in my Traviata, I was able to get him there in less than 3, so as long as you call in a fast car - or just keep Degarvos ride in working order - you should be fine.

I called the favor to stop police chase for a few minutes, called for my fastest car, and got out real quick.

Story Related.
This is only available after killing Remy Duvall. Rendezvous with Donovan. You’ll infiltrate the country club dressed as a waiter. Follow the manager and drug all the wine and guest drinks. Head back to the kitchen for a smoke until you get the objective to follow Olivia. Follow her upstairs and drop the wine bottle on the bar. Pick up the revolver under the bar then eliminate her personal guards before confronting her. Next, you’ll need to find and rescue Stephen Degarmo from the store in the garden, and bring him to Donovan.
