How to unlock the Custom 358 achievement in Mafia III: Definitive Edition - Definitive Guide
The Samson Opus is the perfect car for this achievement. I find this car at two fixed locations in the game, every time. So I think these places are fix for everyone. The first location is in Tickfaw Harbor and the second location in Southdowns. Get a car from one of the two locations.
From the first location in Tickfaw Harbor leads a Highway to the second location in Southdowns. This highway is perfect, no curves just straight forward and with the Samson Opus you reach the 120 mph very fast.

Unless they patched it since this solution this car with no upgrades will not reach 120 on a straight road, with the drivetrain upgrade has no issue, I changed my negative to a positive as the location and route is good, just needs the upgrade hopes this helps everyone

The achievement unlocks when you hold a car's speed at or above 120mph for 20 seconds. Note that the achievement does not pop at the 20 second mark but unlocks after you reduce the speed below 120 mph after sustaining the required speed for 20 seconds. Many cars are not capable of that speed so car selection is important. Most people seem to be getting this achievement with the De'Leo Stiletto which I had not found yet at the time of this writing. Like Zasta 360GameTV, I got this achievement very easily with a car that is always available--the Samson Opus that is found in Tickfaw Harbor.
Make sure the driving mode is set to normal and is NOT set to simulation!. If you are unsure, go into the options menu (as shown in the video below) and select "Game." The simulation mode is very difficult to control. In fact, the car slides so easily that the Samson Opus in simulation mode is an ideal car to get the Bordeaux Drifter achievement. You won't even have to make an effort. The car starts drifting as soon as you make a sharp turn. However, in normal mode, the car handles perfectly and its natural speed makes it one of the top candidates for this achievement.
This video demonstrates conclusively that the Samson Opus does not have to be modified to reach speeds in excess of 120 mph. The achievement is unlocked at the beginning of the game before we are able to modify cars. The current mission is A Taste of the Action where we learn how to set routes. Instead of going to Sammy's Bar in New Bordeaux as the game would have you go, we set a route to a garage in Tickfaw Harbor to pick up a Samson Opus. The Samson Opus is always available in the garage shown in the video.
The route to unlock the achievement starts at the bottom of a multi-lane road. Press all the way to drive at max speed. Stay roughly on the center dividing line and make only subtle adjustments with to steer and avoid traffic. Entering the tunnel, the car is able to sustain a speed greater than 120 mph. After maintaining this speed for 20 sec, once the speed drops below 120 mph, the achievement pops:
Continuing along the route at a high rate of speed, the road bends to the right. When the road straightens out, the car will go airborne as it climbs an incline. When the car lands, the following achievement will unlock for jumping in excess of 50 meters and landing upright:

I did not require an upgrade. In fact, because I am still in the first story mission, I wouldn't even be able to get one. I have just killed Baka and have not yet gone to the Country Club. I am playing on Hard Difficulty. When I drive, I push forward hard and keep fully depressed. I try to stay center so I am not bothered by slower traffic in my lane and can evade vehicles coming towards me. Any movement with right or left is kept as slight as possible. It takes a while to get up to speed--I can't maintain speed above 120 until I hit the tunnel. But, then, I am able to keep it just above 125 mph. I got two achievements on a single run. The jump achievement popped immediately and the speed achievement popped as soon as I stopped the car. I'm now just past the first story mission so I'll take the car out and see if there are any changes to its speed.

All these solutions except for like two of them are missing a simple thing, the Opus requires an upgrade, I kept trying all these like an idiot and wasted so much time

For this achievement i recommend using the De'Leo Stiletto.
This car can be found in the North of Frisco Fields. I found it twice at the beginning of a dirt road near a contruction site. It may take a while for it to show up since the car is quite rare.
After aquiring the De'Leo Stiletto, use the following route:
0:57 - 1:21 : 120 mph+ run

The video will show you the best route to take so simply follow it and stay above 120mph for 20 seconds and the achievement/trophy will unlock.
While you have the Stiletto consider doing the following achievement:

Easiest Way I did mine was fully upgrade your Vehicle Deliveries Supercharger ETC then take the De'Leo Traviata to the bridge to the casino (Top of Frisco Fields and Pointe Verdun, Hard To Miss Very Straight and long road
This can be done at any point during the game. You will need to locate a fast sports car (many spawn in the Frisco Fields suburbs area, if there are none, leave the area and come back). Now head a wide open long road, like a main road/highway. Hit 120 mph and keep it up for 20 seconds, be careful of cars and you should be fine.

Just use a fast car like the De'Leo Traviata and drive to the long bridge which leads towards the casino (just follow the street between Frisco Fields and Point Verdun). There's no traffic and it wents straightforward with no curves at all. Drive 20 seconds and the trophy is yours. It may be that the bridge isn't accessible until the final mission. I didn't even realize it...
This is easier to attempt on your “Flip Playthrough”. On this playthrough assign the districts evenly to your Underbosses and towards the end after you’ve assigned all 9 districts they will have enough Earn to benefit you with vehicle upgrades. You’re gonna have to spend $500,000 for Hole in Your Pocket so do so on the vehicle upgrades which’ll boost your vehicle's’ top speed and acceleration significantly. Now call in a Vehicle Delivery and pick the De’Leo Traviata which is unlocked after “Kill Frank Pagini” from conquering Tickfaw Harbor. Drive onto any highway and maintain your speed at 120mph (observe the needle on the lower part of your screen) for 20 seconds.
The car I used here is from the Exotic Class DE'LEO TRAVIATA which you can deliver it from your position using the Vehicle Delivery request.
Now to make it past 120mph. You will need to search on the map that has a 4 lines highway. Like the sample video.
