How to unlock the New Bordeaux Drifter achievement in Mafia III: Definitive Edition - Definitive Guide
The Samson Opus is the perfect car for this achievement. I find this car at two locations in the game, every time. So I think these places are fix for everyone. The first location is in Tickfaw Harbor and the second location in Southdowns.
Get a car from one of the two locations. Before you start, go in the options menu under the point "Game" and set the driving mode to simulation!
Stop the car complete and then full throttle and steer the car from left to right. You will start "drifting" and easily earn this achievement.

Thumbs up! The Samson Opus definitely provides the easiest way to get this achievement. I got the achievement (while in Simulation Driving Mode) just driving out of the garage in Tickfaw Harbor. I wasn't even trying to get the achievement at the time.

I unlocked this accidentally shortly after switching the Driving Mode to "Simulation". (Found in the Game section of the Options menu)
I took a 90 degree corner at high speed and fishtailed, then fishtailed a few more times as I repeatedly over-corrected my drift.
With the Driving Mode set to Simulation the back end of your starting car (the Samson Drifter) is very loose and it's very easy to keep sliding around for five seconds. Doesn't need to be a "proper" drift or even one continuous drift, just fishtail around for five seconds and this achievement is yours.
If you're still having trouble, I've got a few more tips.
- Wait until late game when you've got more of the vehicle performance unlocks available. A faster, more powerful car can make maintaining a drift easier. The Samson Drifter rivals the Traviata when fully upgraded, but in a heavier, less skittish package.
- Look for the right area. I recommend the wide boulevards and major thoroughfares found in most districts; the open grassy areas of the Bayou; and the hilly, windy roads found in central Barclay Mills and western Frisco Fields. The former two provide ample room to slide around and the hills provide extra momentum when you drift down them.
- Wait until it rains. Makes every surface slicker.
- Shoot out all your tires.

Plus 1.....used the Samson Drifter, didn't even need to set Driving Mode set to Simulation!!! Got this after I got an upgrade from rackets, don't remember which one it was, but I do believe I earned it from Vito.......heck I just fishtailed on a "wide-ish" road and it popped!!
Edit: It was from Vito because at the time, I only had the 2 original rackets from Cassandra & Burke, and 3 OR 4 for Vito when I got this!!!

Using Simulation Driving Mode (options>game settings>Driving Mode) and most vehicles (a Samson Opus is the perfect vehicle to use, but a lot of others work as well)
From a complete stop on any open road if you Hold down and swerve left to right with You will start "Drifting" making it very easy to get this achievement.
The Samson Opus drifts so easily from a complete stop it may even be possible to do this with Normal Driving Mode.
There always seems to be an Opus at Gina Kowalski's in Tickfaw Harbor
Easy to obtain vehicles that this works with:
Smith Moray MX100 - Part of the Family Kick-back pre order DLC and easily obtainable via Vehicle Delivery
Samson Drifter - Lincoln's original Vehicle, regained after Finishing River Row and easily obtainable via Vehicle Delivery

Guide: Head to the area showcased in this video which is located to the left of the Bayou Fantom text on the map. Here you will find a safehouse and a shed with a car inside it. There are two possible cars that can spawn but the one that you want to do this in to make it easier is the "Berkley Gypsy" (If it doesn't spawn for you simply drive down the road then come back and a new car will spawn). Now that you have the gypsy you will want to floor it until you get past a light post just past the bridge and hold down the brake and handbrake buttons for half a second while pulling the trigger left causing you to drift. Doing this for 5 seconds will get you the achievement/trophy.

The above solutions are great, but you can use ANY car at ANY time for my solution.
First, find a car and shoot out all 4 of its tires. Then, drive around a bit until all 4 tires are blown and you're driving on the rims. Last, gain some speed, then make a sharp turn. Your car will slide around like it's on ice. Super easy to slide sideways for 5+ seconds.

I am not sure of the specifics on this one. It is either 5 seconds over the course of the game, or 5 seconds without hitting anything. I unlocked it by weaving side to side down a wide street. I would use the handbrake () and turn, then straighten up and do it again. It unlocked shortly after.
I avoided everything on the road as I did this. Will need more input from people on if they got it randomly or were trying for it to know if hitting things voids it.

This trophy can be earned almost from the beginning of the game, but it will be easier if you use a faster car like a Di'Leo or another sports car - any of the ones that can be delivered by Burke are fine.
Once you have the car, go into the menu and change the driving mode to "Simulation." From there, just floor the gas while turning back and forth and you should be able to pass 5 seconds easily.

This needs to be done in one continuous run. Weaving side to side using down a long wide road at night is best, far fewer object to hit.
If you’re struggling, switch the driving mode to simulation first, the cars seem to drift a lot more and a lot easier. Don’t even need to be driving fast!

Pick any car and swerve to the left and right in a zigzag pattern for 5 seconds without hitting anything and you’ll unlock this easily.
