To unlock the bounty hunting missions, you need to complete the main storyline of the DLC.
There's 3 of these missions, and they can be completed in about 20 minutes or so.

This glitched on me originally. Did the three assignments in one setting, spoke to the guy after the third mission then no achievement. Had to go for it again on my run through of the game a second time. Fortunately it unlocked the second time around.
The only thing that I can think of that might have caused it to glitch is that I had used a token to stop the police from pursuing me and when I delivered the last bounty, the timer for the police 'black out' was still running. I've honestly no idea if that was the reason for the glitch but just suggest any others that might use a token to wait until the timer has finished, then deliver the bounty.

Story related, cannot be missed.
After completing the main storyline, you will unlock the Bounty Hunt missions. There are 3 of them, all of which entail you to knock out enemies with the Dart Gun and deliver them to the base. These missions are very easy to complete and won't take much time at all.
Once you complete all 3 missions, the trophy will pop.
