Here we have my delicious 100% Achievement guide for those that need it! :)
Few things to mention to get the fastest time possible on each level:-
Hold
to skip every cutscene, This is important.
Pausing the game DOES Stop the timer, So if you use my guide, pause, watch a few things i do, and go from there!
In the PS version, originally there were no chapter selects, but there is in this one!
So if you feel like you took too long, or the cheevo didn't unlock, simply press start, go to chapters and try again!
I am unsure on this one, but i made a small mistake which cost me precious seconds, i loaded up the last autosave (Which wasn't too far away), finished the level and the achievement for speed running it unlocked.
So potentially you could just load autosave (But dont quote me on that yet)
It seems stressful but its really fun, it is a great game and i hope you enjoy :)

Yes you CAN pause and you can also do "Restart From Autosave". For me both works.

Some missions are quite tight on time and it's really important to save as often as possible so you can easily back track.
