There are five unlockable options in Mayhem 3D:
Tire Traction Option - unlocked at 6,000 Mayhem points
Boost Option - unlocked at 10,000 Mayhem points
Damage Distribution Option - unlocked at 15,000 Mayhem points
Damage Option - unlocked at 20,000 Mayhem points
Infinite Boost - unlocked at 50,000 Mayhem points
Get 50,000 Mayhem points to unlock this achievement, you should be able to get this fairly easily by playing through career.

how do you get to use them in game mode

There is only one option to unlock which is Infinite Boost mode (using that option doesn't disable trophies). You will need enough mayhem points for that option to unlock. You will unlock this on your way to 100,000 mayhem points.
