This is more than likely to come naturally just playing through the game. If by some miracle you miss this, it can be obtained by going to Exhibition and setting up a Demolition Derby game on any map.
Set the opponents to 11 and begin. Focus on hitting cars in the sides and rear to minimize the damage you take. It shouldn't take to long to get 3,000+ mayhem points.

This can be earned easily through Career events. If you didn't earn it then go to Exhibition, select Domination with 11 opponents and when the event starts, start pushing them off the edges to earn points. Get 3,000 during the event to unlock the trophy.
NOTE: Cannot be done in Challenge events (Challenge events are in Career, each chapter will have a Challenge as the last event).
