How to unlock the Nothin' But a Good Time achievement in Mercenaries 2: World in Flames - Definitive Guide
Finish the boatrace three times. You have to be in multiplayer to do this achievement. The player has to join you're game! And you have to be in the same exact boat. You shoot, the other player drives. Shoot every mine possible.

One more thing: You only get this achievement by playing with one person only. If the player leaves the game, then you can't get the achievement, it just starts all over again.
A microphone will help w/ getting this achievement. I used one to persuade the other person online to help me out, and he did.

Am I missing something? I beat the game and remember doing all three levels of the boat race. Does it just disappear after you beat level 3? I went the that correct base and there is no way to start the race....

I believe it's the first two missions you need to complete before you can do this. (You need to play longer to get the boat race method).
Quick things to note:
- playing with different co-op partners may reset your progress.
- not all objects count, see below.
- Once you've run out of ammo, head to either the front or back of the mansion and the host should enter the building while the second player stays in the vehicle. If both players exit the vehicle and enter the mansion, you will lose the vehicle. If one person stays, you refill all the ammo in it.
1. Finding vehicles
You can find vehicles that have turrets on them throughout the map, they'll be driving up and down the roads outside the mansion. If you're struggling to find a vehicle with a turret, head out of the mansion gates and head right as far as you can go, drive around that area. At some point you'll end up near the friendly allied zone and there will either be enemy forces attacking, or your own team forces idling around. I wouldn't recommend taking the giant vehicle, the turret trucks are far easier to use.
2. Safehouse
Head back to the safehouse, this is where you'll be getting all 200 destructions. You'll want to focus on taking anything down that has a "health bar" or in other words, can be damaged but not destroyed in one shot. If you've played together from the beginning of the first mission, there's a part with the tank where you can destroy a whole lot of objects. Take advantage of this part and destroy everything you can in order to save time later.
Small trees (Safehouse)
Plant Pots (Safehouse)
Thick wall hedges (Safehouse)
Ornamental stone pillars/light (Safehouse)
Patio table/chairs (Safehouse)
Garbage bags
Piles of boxes
Destroyable homes/fences
Fuel Tank
My partner and I discovered that the small one-three tile bushes may not count for the achievement. Anything that dies in one shot other than the plant pots seems to count for nothing. It's also possible that no objects count properly and it's all random whether you get credit. It took me over 650 objects including bushes, but it popped on a fuel tank explosion.
3. Once you've run out of ammo, head to either the front or back of the mansion and the host should enter the building while the second player stays in the vehicle. If both players exit the vehicle and enter the mansion, you will lose the vehicle. If one person stays, you refill all the ammo in it.
Entering and exiting the safehouse does not guarantee that the objects respawn outside. They respawn at random.

My boosting partner and I got this early and we had a ton of trouble with the PMC area. Most the objects didnt feel like they were counting and we definitely destroyed more than 200 objects there. What I ended up theorizing was that even though a lot of objects at the PMC HQ have a health bar, only some of the objects' health bars were going down and the Large hedges health bars seemed inconsistent.
I think thats the key for getting this achievement to unlock: Shooting and destroying objects that have health bars that Actually and Consistently go down. So we ended up going to Maracaibo and the UP outposts around there and found objects that fit that description.
Objects that worked for us:

Trashcans (all silver ones that have no openings)
Trash Piles
Newspaper Stands
Fruit Stands
Spice Containers
Wooden Benches
Wooden Box piles (Certain piles that are a different shade compared to a different box pile)
Patio Tables
Patio Chairs
Construction Barriers
Yellow Water Barrels
There is a lot more objects that could get on this list but the idea is once we noticed the issue and switched to Maracaibo we ended up getting the achievement very fast. It is also nice in these areas as there is constant UP trucks and we switched trucks whenever we needed ammo.

A simple way to get this is to get a MG vehicle of some type and park it right in front of the Villa entrance. Climb in the gunner seat and destroy the trees/shrubs etc that you can. Enter and exit the villa and the ammo will be reset along with the items. Just repeat. You do not have to have the coop partner in the car they can just be idle where they spawn. I had another PS3 and alt account as my partner and just used my main to shoot all the stuff until it popped up.
