For a final boss it's surprisingly easy, provided you know what to do of course. So, sword fight, one on one. On Extreme you can find Body Armor (after the battle with Vamp during the swim before meeting Emma in one of the flooded rooms), it greatly simplifies the battle because reduces damage by 2 times.

Then you run back again and he will shoot again. Repeating this way, you can easily remove 60% from him until the second stage of the battle.
