Many of these barrels will get the notice of the police and you'll be trying to lose them a lot, which can get annoying.
There are 2 ways around this.
The first would be to do this at the very beginning of the game. The police don't come after you until a certain race so as long as you haven't done that race you don't have to worry about them. I think it's the 3rd or 4th race. Unfortunately this game doesn't make it easy to start over. I never started the game over, but what I'm told is you must erase your game data to start over.
The other way is to go to the garage and test drive any car and get them then. The police don't chase you during a test drive.
Also if you can't find a few, that's because they are on a roof only accessible by jumping onto the roof. I think there are 2 of those. Most of these are pretty straight forward though.

There is also a great way to avoid the cops that I am surprised that no one has mentioned:
From the single player game hit:
Start > Xbox Live > Player Match > Create Match > Yes > Cruise >
Then set the Private Slots to ALL
You will be able to cruise around and have no one bother you at all, not even those annoying cops!

The easiest way I found to get both of the collectable achievments is this. 1 search for the collectables map on google that way you know where they are all at, that way you can zoom in and out to see a little better to as of where they are. 2hit the pause button go over to Xbox live, then go to quick cruise. By doing this you will no longer have to worry about cops or other cars its just you and the road if you put the hammer down and bust it out these achievements will only take an hour to find all of them, when you done you can go back to your single player mode and all your data is saved and you now have 160G.
