Elder guardians are found in ocean monuments. They look like normal guardians, but lighter in color and slightly larger. There are 3 in every ocean monument; one in the top of the pyramid and one in each of the side wings. They aren't terribly difficult to kill. They are just annoying to get to. When you get near them, they slow down your ability to mine, making it impossible to mine through the pyramid while underwater since you will drown before breaking the block. I would build a short tower in the form of a + symbol on top of the center pyramid, then dig straight down the middle of the + so that you are exposed to the air and don't have to worry about drowning.
I started a seed to get the Map Room achievement and quickly found an ocean monument just north west of the spawn. The seed is 193751466 (v. 1.2.0.). I also found some diamonds and a ton of iron in the cave right next to the spawn, so you can easily prepare yourself for the battle.

I took a bucket of milk with me on my run. I used the plus sign method which worked pretty well. But I would recommend the milk still to save time.

Bring a cow in you boat next time...
A pair of stacks of sand can be laid on top of the pyramid from the boat then dig a hole down below the first layer of prismarine and fill it with sand before you jump in. Expand and build walls to get dry space then prepare to open a hole to poke the elder guardian in the top room.

This can be done on the newest tutorial world as of JAN 2018
- Make sure to use a save file that has NEVER been set to "Peaceful" as it will despawn the guardian for good.
- Coordinates: X: -296 Y: 63 Z: 318
- One person must do ALL damage to obtain the achievement.
- Make sure to save before killing the guardian, then check the box that says "Disable Auto-Save" when reloading the save file
- If your also going for this achievement in the "New" Play-Together version, then you must mine a 1x1 square in the roof of the guardian's room before making your save. After that just Sync your old save on the new version of the game and simply go down and defeat the guardian again.
