This one needs much luck. I've found a technique that may be easier but it's still not 100%. Be the first driver with a big distance to the 2nd driver. Then when you see on the bottom right map a weapon coming towards your direction try to time it right before you take a jump ramp. I must add that the Sonic Rift weapon goes much slower when you're in the air than the other weapons. (the easiest weapon to defend when you're in the air is the "Bolt Storm"). I also found another technique (and got the trophy this way) that you don't have to do "in the air". When you have jumped the first ramp, there will be a zigzag part with a first turn to the right, then to the left. Right after that left turn there's a "mini jump" and what I did was I had a "Sonic Rift" coming into my direction on my last lap and I could jump & defend on that place and got the trophy, but as you read it really requires a perfect combination of luck & timing. If these techniques are not working for you and you got a second controller try it with two players in the "split screen" mode or boost with other players.
