Any parried attack will count! On one simple mob, two will be counted: the one that will restore the resolve bar and the next one, which will kill.

we just take the first homeless person we come across and stupidly parry him alone without pressing the attack button, I made a trophy on one homeless person.

Parrying is counted without burning the scale, i.e. you simply fill 1 scale, leave, for example, Fallgrim’s tower, approach the first robbers and repel attacks using L1. When you have little health left, return to your sister. 100 times and the trophy is yours.
