Another really simple one.
There are a total of 8/9 of these on the track and they are the blue rings with arrows inside. All but one are on the waters surface, with one in the air after a ramp. For the one on the ramp you do need to jump to get to it.

Iv just done this and i can confirm that you DO NOT need to jump for the ones that are sea level.

Speed rings are the big blue circles with green arrows in the middle. Jump or surf through the speed rings to hit them. When you go for this trophy, ignore everything except for the speed rings. You should be able to get this pretty easily on you first try.
