If you want to try do this with randoms I can confirm that you will get achievement if you participate only in last race of series.
If you are going to boost this with friend shortest champ you can set is 4 x 3 lap races. Shortest track is Maggiora/Italy.

Alright, for anyone interested as of today 18/12 this achievement is doable again, for how long for who knows. Myself and GooseBoxLive were able to stay connected for the entire 4 races and unlock the achievement today.

This achievement doesn't seem to be unlockable as of October 2023. I hope this changes, but as of right now the game will boot you back to the main menu or your boosting partner after 2 or 3 of the 4 races you have to do. Myself and a friend have tried for ages and it just can't seem to keep a game going long enough to unlock the achievement. Pretty gutted...
