Super boosting happens during races when you hit the green checkpoints and you speed up briefly. This achievement is cumulative so after a few races it'll pop.

As long as you’re accelerating regularly (with 
) and hitting all of the speed boost checkpoints during the races in story mode, this trophy will unlock naturally. Otherwise, set up a quickplay race and start boosting!
