After completing the campaign (worth doing first before going for weapon achievements as you'll definitely get a few of these kills on the way), go to Quick Play and set up a free-for-all dogfight with 5 easy AI enemies. You can also turn on the Supernova perk if you want.
On the first map there is a Supernova power-up (a sort of light blue blob) under a square archway. Grab that and then fly around until an enemy locks on (a missile icon will flash in red at the bottom-left of the screen). As soon as you see the icon, hit LB to destroy the missile. You cannot fire this off too soon.
