Drifting is done manually by pressing while rounding corners, but you automatically drift after you boost by just continuing to accelerate. You'll get this naturally throughout the game and definitely during the time trials if you don't get it by the time you finish Championship Mode. You can also check your progress towards this trophy in the Trophies section at the Main Menu.
