Just set all user sliders up and computer sliders down. 1 min quarters on All - Star Difficulty. You can pick East or West. Soon as you win the game the achievement will pop up in a few seconds.
You do this for East vs West. Celtics vs Lakers and Rookie Challenge Trophy achievements.

Same as Celtics vs Lakers Trophy except when you are picking teams, have one be the Eastern Conference All-Stars and the other be the Western Conference All-Stars. It doesn't matter what team you use but I used the West because they have more players on the team that have achievements associated with them.
