This one really isn't too bad. Under the cops part of the Super Sports pack choose Lockdown, and then pick the Gumpert apollo s. Then, after your first takedown, you've got it.

2023 Boosting Solution / requires two Xboxes & accounts

  • Player that needs the achievement selects Hot Pursuit Online / Create Friends Game / Interceptor / Hyper
  • Select Event / Mission Beach / Mission Beach East
  • Invite Friend to Match
  • Make sure you're Playing as a Cop (X button to toggle between Racer/Cop) and Start Match
  • Cop chooses Gumpert Apollo S, Racer chooses whatever
  • Bust the racer however you choose to unlock the achievement. It'll pop instantly in game

There is a cop event called Lockdown, where you can get this trophy. There are 7 racers just bust one and this trophy is yours. This is a Hot Pursuit event. You get a choice of cars just pick the GUMBERT Apollo S (the first car). The GUMBERT Apollo S is easily damaged so be careful.
