This one is pretty simple. Play the Online Versus Play option and play ranked matches against fellow Xbox Live players. After each game you complete, you'll get points that add up your ranking.
Level 5 is 700 points, it should take about 3 games if you win, possibly more depending on how well you play, score, etc.,
EDIT: You lose points if you lose, so the only way up is to win.

The way I'm working on boosting it is go to the community lobbies create your own lobby and set it for friends only so you can boost it . As for the achievement not unlocking for you it is because you can't get the achievement by quitting out however you can get to that level by having someone quit out then when you get to lets say level 5 play a full game then your achievement will pop. I will be hosting boosting sessions to finish this up. Also my advice for boosting is when its the other guys turn to win sign in a secondary account so you don't lose points or possibly rank when losing.
*Note: If you intend on just quitting out til you get to whatever level achievement your going for you don't get as much XP as occasionally playing full games. Also after a while playing with the same person your XP for wins lowers quite a bit. But you still get some.

The best way to run through this is taking your time. Don't rush up all your players; play your positions correctly. Avoid trying to body check with defence-men when its 3 on 2 because people online are very capable of getting the puck around you which leads to breakaways. (stick to poke checking/diving in front of pucks).
I can't remember exactly how i got this but i remember winning four or five games straight. If you're pretty decent at 1v1's you will have no trouble doing this because it pairs you up with people with similar skill level.
Points range up from 600-750 a match (levels take longer as you exceed to higher levels) depending on how you play and the outcome of the game.
