This trophy is only available after Swaine joins your party (which occurs during your first visit to Castaway Cove), but it's pretty easy to get once you have him.
Once you have him, then all you have to do is take control of him during battle (using L1 to select him), navigate to his Trickshot abilities, select Mugshot and choose your target. You don't have to switch to play as Swaine to receive this trophy. He will use Mugshot occasionally on his own in battles. I received it within a few hours of gameplay after Swaine joined my party.
If you let him Mugshot on his own you don't have to worry about timing his shot, etc.

Once Swaine joins your party, his first ability, Mugshot, lets you steal from enemies. Just keep using this and you'll have your trophy in no time. You'll be doing a lot of stealing during mid/endgame for materials, so there's no need to grind it right away. If you're having trouble with your teammates killing things before you can steal, switch to All-Out Defense with while you steal.

Swaine also steals weapons and various useful gear in the battle with bosses (this does not apply to the nightmares that we kill in order to cleanse the hearts of the characters from various vices; there is also no item in the final battle with the Zodiarchs).
