The boss in question here is the World-Saving Tome. It is essentially the first form of the final boss.
When it has a glowing yellow sphere around it, blast it with magic (Dark Blast is my preferred method.) Once the barrier is gone, pummel it with melee. Once it's stunned and has the timer, continue to pummel it with melee. It should go down with relative ease.
As with all of the "Defeat Boss X within time Y" achievements, it is best to not attempt this achievement until a later playthrough.
I achieved it on my second play with the difficulty set to Easy.
Achievement should pop after a short cinematic following the fight.

This battle occurs shortly after Soul Crusher and is easily the biggest joke of the timed trophies. Skip all cutscenes, don't worry if you somehow miss the trophy in your first playthrough, it will be much easier in New Game+
Hit the book with fully charged Dark Hand or Dark Lance, after a few hits the book will be defeated and the trophy will unlock.
