Fastest and easiest way to get this would be to do the Encampment bonus mission as you are equipped with a Mk16 MOD 0 with scope and Stinger missile. After clearing out the first camp a chopper will fly over the cleared out camp and hover, pull out the stinger take the shot and there ya go. Achievement unlocked
To get the Encampment Bonus Mission use OFPWEB1 as the unlock code in the Extras Menu

Worked on my second attempt. First attempt my squad mates had hit with gun-fire before i launched my stinger missile.

Near the end of mission four, after you clear out the control tower at the air strip, there is an AA weapon in the ammo cache on the bottom floor. Trade in your RPG and take it. An attack chopper will arrive with the APCs. Go to the roof, aim at the chopper and you'll see a square kind of locked on. Wait until the diamond appears indicating a lock and shoot! Achievement unlocked.

Enter OFPWEB1 as a Bonus Code to unlock the Encampment spec ops search and destroy single mission, If you are host you spawn with a wtinger missile launcher as your secondary weapon, start clearing the area then shoot down the gunship when it comes.
Notes**
There is a white sqaure around the chopper when aiming, wait till the diamand sqaure before firing the stinger.

Single missions can be played at any point in the game, just go on single mission the change from story to single short missions.
