If you are dead / waiting to respawn when the last one is killed you will not get this achievement

When you're assaulting the village with the POWs, stay on the l north side of it. Work your way through the enemies, and start moving into the town from the east. Soon enough, you'll hear a chopper being called out - the APCs will then be coming from the NE, so nail them with your SMAW.

If you've already used up the SMAW rockets, you can pick up a Queen Bee from an AT trooper you kill on the north side of the village.

I found two.

One to the North/Northeast of the village.
The other was on the West side of the village.

I destroyed the N/NE one first, then swung around the north end of the village to get the second one. Be careful the PLA troops will swing south and east to get behind you. After getting the achievement, I ran for the next RV point. I had saved my artillery strike from earlier. I used it here to destroy the village, pinning down the PLA, which in turn allowed me to escape.

Both of my APCs were in the same place... Coming down the road to the north.
