There are five Encore gardens, each with five spectra, for 25 Encore Spectra in total. The first time doing a garden, it will end right after you claim the first spectra. The second run, it will end after two spectra. And so on. You will have to complete each stage five times, with all five spectra only possible to collect on the fifth run. After you have collected the fourth spectra, you will need to explore most of the garden anyhow and is the perfect time to open all the seeds of that garden and then collect the fifth spectra.
