This doesn't mean you have to have 100 trees at the same time.
Simply plant as many trees as you want, the delete them and plant again. I found doing it in bunches of 20 was easy.

Trees become available as you progress and are accumulative. They are located on the third tab from the pull up menu. Even when you have all expansions, you will not have enough room for 100 so will have to remove/trash older items in order to reach 100. Once you have planted 100 from this menu, the trophy will pop.
