This should come naturally while working on the other achievements. Personally I got it after completing all three tournaments (Rookie, Pro, and Legendary), all the "free fishing" challenges on the first lake, and 2-3 challenges on the second lake. However, if you are in a hurry to get this, simply go to any lake in "free fishing" mode and cast 500 times. To expedite the process, you don't have to reel in the lure each time; just press the b button to cut the line once the lure enters the water. The cast still counts. In order to check your progress, from the main menu (after you load your character), go to "extras" -> "statistics" -> "casting statistics."
