Summoning spells are in the Domination category, and can only be used by spellcasters. You'll need a magician, witch, druid, or certain elf classes to have access to magic. The spells to summon demons are called "Blood and Fury" and "Deadly Fate". You can only summon demons in combat as well.
They will also need a decent skill level in the spell itself. Then engage in combat to use it. On your magic caster's turn, click on the character themselves and choose to use a spell. Scroll down to Domination, and then find the spell called "Blood and Fury". Cast it, and if your skill is high enough, a Heshtat (demon) will appear next to you.
Do this 10 times for the achievement to unlock. You can summon multiple demons in a single battle as well.
