The default difficulty the first time around is normally either easy or just 'normal' when you pick Jill. It's pretty straight forward actually, if you're lost however and struggling with the game...IGN has a pretty good guide for mostly all of the Resident Evil games.

Clear the game on Very Easy difficulty or higher with Chris or Jill. Very Easy is the easiest difficulty the game allows. It allows more item pickups, more ammunition pickups, Chris and Jill can take more damage, enemies take fewer hits to kills, and there are fewer enemies in the game. This trophy stacks with all other difficulties as it is the lowest difficulty available in the game.
