The majority of the Events in the game are standard, 2 lap, 7 AI races. Not much changes in terms of strategy; earn boost and keep a clean line. The AI does rubber band, and has a fixed line (which is annoying as they corner much better than you on some tight tracks).
If you are struggling, sometimes dropping to a lower spec-ed vehicle actually helps, as the AI scales down with you. Still, none of the races should require more than a handful of retries to master.
As noted in 
Champion, the Manta is probably the best vehicle for most Events.

Race events are standard 8-player/2 lap race events that make the majority of the Career. The A.I. will often rubber band you and the events will become slightly harder as you progress through the career, but using the Manta jet ski will make these races a breeze.
