How to unlock the Flawless Fretwork achievement in Rock Band 2 - Definitive Guide
As far as songs that are on the disc, We Got The Beat, Pretend We're Dead, Hungry Like the Wolf and Today are some of the easiest songs to get 100% notes hit on.
If any songs are brought over from the Rock Band 1 disc in the disc export feature, Maps, Here It Goes Again and Mississippi Queen are a few of the easiest.
As for DLC, some options are absolutely slam dunks. The most notable is the free song Charlene (I'm Right Behind You), which clocks in at just over a minute long, and only has 146 notes. Several songs from The Pixies' album Doolittle are fairly easy 100%s as well, notable Tame and Monkey Gone to Heaven.
Play local Tug of War, either with a friend or just plug the second controller in and leave it alone. Then play whichever song you are good at. I kept failing We Got The Beat by 1 or 2 notes so I went back to Charlene, mainly because of its length (Thank You Boys is just too difficult), played in on Local Tug of War and you will play less notes than before as the game seems to share them between both players.
I was Player 1 and the game gave the second profile (I signed in just to be sure) the hardest parts of the song. There were a few tough bits but either this was a total fluke, or profile 2 is always gonna get the harder parts.
This is a video on the easiest way to unlock the Flawless Fretwork achievement in Rock Band 2. I used this same song for Rock Band 1 also.
To do this you need to purchase the Album Legend or the song Satisfy my Soul. The song on its own is £1.59.
You can do this with 1 guitar normally in quick play or to make it even easier play in Tug of War mode to reduce the chances to miss notes. You'll need a second guitar to do this though.

If you've gotten this achievement on Rock Band 1, and have exported your songs or DLC, just do it on that one. If not, try it on Today by Smashing Pumpkins, that one is pretty easy, just watch out for the chords to hammer ons. Or do it on Nine in the Afternoon by Panic! at the Disco. A little more advanced, but should be manageable. It's pretty short and has a simple guitar part. DLC-wise, Charlene is probably the easiest. It's free, so no worries.
Also, another note, you can over strum for the 100% achievements, just hit all the notes. All the 100% achievements can be done in local tug of war, which is easier because you get less notes then you usually would.
