Neither of these solutions made any sense to me.
The key to this is that a picture of the X button will sometimes pop up on the screen after a tackle. Press X when this happens and score without being tackled.
The easiest way I found to make this prompt come up was to run side to side and allow myself to get tackled by the last player on a side. When I would get tackled in the middle of the field there would always be a ruck. Getting tackled in open space is more likely to allow a quick pickup.

I actually did this achievement whilst trying to go for the "chip and score" achievement. From halfway inside the oppositions 22 metre zone I kicked the ball with the scrum half from out of the ruck to the opposite width of the field, 1 of my players caught it and got tackled before the touchline and I had an extra man spare to pick up and just dive over the line.

When you are tackled in the right position, 
should appear over the following players head. Tap it, and he should step over and collect the ball then run on ahead. Quite often, the player will be tackled straight away, but you should get the chance for this sooner rather than later. Again, you can't pass, it needs to be the same player that collects the ball.
