When I attempt to play xbox live it comes up with ‘your gamer profile does not have the correct permissions’. Does this mean the servers are down or is it a problem on my end?

The online still works.

However, I got disconnected during the first game, so I had to play the match again and it popped at the end of the match. I should imagine this is probably due to bad servers, as the game is very old now. My internet connection is stable and reliable.

You don't need to win the match, just get to the end, it should pop when it finishes.
