I found the quickest way to get this was..
Settings on simulation, low simulation.
Pick the bike you are best with and your best track, race length set to 5% (1 lap)
Then make sure you come 1st, 2nd & 3rd in one quick race.
Easy achievement, took me 3 races and around 10minutes to complete :]

Access Quick Race from the Simulation menu and pick the track you want to play on. You will need to do this three times and for each race finish in a different position. You need to be first once, second once and third once. If you are having trouble finishing second or third, change your starting position when you set up the quick race (under Race Options) and put yourself second or third. Then just keep behind the biker in front of you.
