Winning a Race Weekend is the easy part.
But how to unlock the Milestone helmet?
Complete (to at least a bronze trophy) 20 events in story mode. You'll almost certainly do this just finishing one branch of the story mode unless you progress quickly due to winning a lot of gold trophies. 20 trophies and you have the helmet.

Once you have unlocked the Milestone helmet go to the Riders menu, select Edit and then Helmet. It is the 20th one on the list so scroll across to it, select it and save the changes. Now all you have to do is win a Race Weekend (found on Simulation only). If you pick the track Magny-Cours and follow the line I take in the video below you can skip qualifying and go straight to Race 1, and go from 27th to 1st with ease.
