Real easy to do. Seeing as the multiplayer portion of this game is pretty much dead anyway, I still suggest that you set your game lobbies up as friend's only.
To be able to get to the championship follow the menu path of.

Once at the create match screen the settings I found the quickest and easiest were.

No longer possible due to server closure.
From the main menu go to multiplayer, select Quick Race (not Quick Search) and then Create Match. Choose the track you want then set the laps to 1, make sure the AI is off and the lobby is private. Once you complete the race this trophy will unlock.
