Simple one to do with a boosting partner or a friend. Seeing as the multiplayer portion of this game is pretty much dead anyway, I still suggest that you set your game lobbies up as friend's only.

To be able to get to the championship follow the menu path of.
Xbox Live > Championship > Create Match

Once at the create match screen the settings I found the quickest and easiest were.
Game Style - Arcade
Class - Superbike
Crew - No
Laps - 1
Weather - Sunny
Max Players - 2
AI - Off
Collisions - Off
Privacy - Friends Only
Once the settings are sorted just remove as many races as you can. You can only have a minimum of 3.

Once the lobby is created invite the other person in and then start the championship. One person wins the first 3 and then the other person wins the next 3.

I am unsure whether you can bother get it in one championship by turning on the crew setting so any clarification regarding that would be helpful. If you are going to negative vote this then please give a reason why.

No longer possible due to server closure.

From the main menu go to multiplayer, select Championship and finally Create Match. In the settings put the Privacy to Private and make sure the AI are off. To save time ensure you set the number of laps to 1. After this press and create a password so that only your boosting partner can join. You will then see a list of 12 tracks. Using you can remove all but 3. Now take it in turns to race the 3 tracks (you can do the same track 3x if you want). In winning the first of the 3 races you will get the trophy Rookie of the lobbies. After winning the 3rd race this trophy will pop.
