This will be your last trophy to unlock after completion of Arcade and Original mode. You can track how many fish you've caught via the Leaderboards on the main menu, and also 'History Data' in the settings menu (the latter will be a more accurate tracking method as the leaderboards don't instantly update).

This trophy will be a lengthy grind, and I highly suggest using Practice Mode to make your way to the 500 total. The rate you catch fish here is far higher due to the fact you can specify where to fish, the time of day and the weather conditions. Maybe try different lures and different areas to keep the experience as fresh as possible.
