This can be done in almost any level but I managed to do it early in the first level (not the prologue!) "Schöneberg Convoy". Simply ensure the focus reticle is on their eye (I managed to get three of these in the mission but this video shows my first one).

A good place is in Mission 1 - Schöneberg Convoy on Cadet Difficulty. Shortly after the beginning you cross a building and from here is the perfect position.

I'm not sure if it made a difference but I put the Bullet Cam frequency on Normal, I had it on reduced. I aimed where it sort of lined up with his other eye so it went through both sort of.

To unlock the Deadeye trophy in Sniper Elite V2 Remastered, you will need to snipe an enemy in the eye.
You can do this on the Schöneberg Convoy mission. Early in the mission, you will have to cross a building. You will come to a room with a large hole in the wall and some sandbags. A little further down the road, you will see a soldier stood in what used to be the doorway to a now destroyed building. Aim for the eye, which will be much easier on Cadet difficulty, take the stot and if you hit him in the eye, the trophy will unlock.

You should naturally get this while you are going for headshots for Head Honcho (25G). It can be obtained from being shot in the head as long as it goes through the eye socket. You will see the eye explode to confirm you have gotten an eye shot. You can even get this by shooting an enemy that is asleep in a chair or resting against a wall.
