This one will come naturally over the course of the game. However I've found that ranged based characters (particularly Elven Rogues) have a higher rate of critical hits.

For those who wish to get it sooner than later, or simply don't trust true RNG, there is a setting in the gameplay options for "forced criticals." This will ensure you get at least one critical every fifteen hits, making this achievement impossible to miss.

a critical hit is scored when a roll of 20 on the 20-sided die is rolled. You can increase the odds of getting one with settings, but you'll get lots without. Doing all the side quests will probably get you the 1000 attacks to naturally get this in the main campaign.
If you want to make the achievement and game easier, turn on "forced criticals." This will ensure you get at least one critical hit every fifteen attacks, lowering the number needed to 750 attacks made.
The champion fighter also scores a critical hit on a 19, but he's weak, so don't bother. The Palace of Ice DLC has a dagger that can critical hit on 18, 19, or 20, and that's nice, but the campaign is too short to take advantage of it.
